Gold coins retain their size and value because of the unique properties of Gold.
Gold coins have long been used as currency because Gold does not oxidize, which would change its weight and size. Gold Eagle coins that are stamped 1 oz remain 1 oz and maintain their value. U.S. Mint Gold coins used to be made with Gold alloys to give hardiness for handling, but now because Gold coins are generally not circulated, they can be made from softer, even finer Gold. The Gold American Eagle is primarily investment bullion and because it will not oxidize away, it will always retain its value per troy ounce.
The price for a Gold American Eagle is the Gold spot price plus a premium price.
When buying the Gold American Eagle or any other Precious Metal coin, there are two different prices to consider: the Gold spot price and the premium price of Gold. When you buy Gold Eagle coins, you do not pay the Gold spot price because that price, which changes by the second, is the base price for unfabricated Gold. When you buy U.S. Mint Gold coins, the premium price, added on top of the Gold spot price, takes into account the extra costs for distribution, fabrication, nominal dealer fees and any numismatic or collector value. U.S. Gold coins have the added value of the guarantee of quality that comes with U.S. Gold currency.
The 1 oz Gold American Eagle has a face value of $50, though its intrinsic Gold value far exceeds this value.

The history of Gold Eagle coins
The Gold American Eagle is based on what many have called the most beautiful Gold coin ever made: the 1907 Augustus Saint-Gaudens $20 Double Eagle. Look at modern Gold Eagle coins and you can see the realization of President Theodore Roosevelt’s dream to have artistic coins like ancient Greek and Roman coins. The Saint-Gaudens Gold coins were a flattened version of his ultra-high relief designs because the high-relief designs were hard to make and did not stack well. Modern U.S. Mint Gold coins reimagine Saint-Gaudens' classic design in even higher purity Gold.
